How to make the perfect cup of coffee


Have you ever sat down to a warm, steamy mug of coffee, take a sip and just go…meh? If so, you have our sympathies. A great cup of coffee should be rich, smooth and comforting. Bad coffee is intolerable, so we thought we’d share our secrets for how to make the best cup of coffee you’ll ever drink at home. At Wild Highland Coffee, we serve specialty coffee every day at Loch Lomond Shores.In this guide, we’ll show you how to make a cappuccino at home like a professional barista, from choosing the right coffee beans to steaming milk perfectly.

Choose quality coffee beans

Every great cappuccino begins with great coffee beans. Even the best coffee machine cannot compensate for low-quality coffee. At Wild Highland Coffee, we carefully select blends that deliver the rich flavour needed for a great espresso base. They are:

The Ben is a boldly blended combination of Arabica & Robusta blend coffee beans, which have been roasted to a dark chocolate colour.

The Bothy is a wonderfully smooth blend with an intense chocolatey flavour. 

And The Loch is absolutely packed full of flavour. 100% made from Arabica beans, this coffee is a bit milder than usual, although absolutely full of taste. 

For those keen on the taste but not the caffeine, our Dress Decaf coffee gives you all of the flavour without the kick. Perfect for a gentle sip at night without the worry of being wide awake at 3 am. 

Using freshly roasted coffee beans will dramatically improve the flavour of your cappuccino.

Use the best coffee-making machine

A great coffee machine doesn’t always make a great coffee - but it will if you follow these steps!

To make a cappuccino at home, the best option is an espresso machine. Espresso forms the foundation of the drink and gives cappuccino its distinctive flavour. They come in many different shapes, sizes and cost options, so make sure you research the right one for you and your kitchen before buying.

Before brewing your espresso:

  1. Grind fresh coffee beans for espresso.
  2. Fill the portafilter/portaholder with ground coffee.
  3. Tamp the coffee firmly to remove any air pockets.
  4. Lock the portafilter securely into the group head.
  5. Brew a delicious double shot of espresso.

Why do we tamp the coffee down? Tamping evenly ensures water flows through the coffee correctly, giving you a smooth, balanced espresso shot. Any air pockets will disrupt the flow of water. 

How to steam your milk

Milk texture is what separates a good cappuccino from a great one. Cappuccino milk should be smooth, creamy and lightly frothy, often called microfoam. Key to all of this is listening and watching the milk. 

Start by pouring cold milk into a metal jug and then follow these simple steps:

  1. Place the steam wand just below the milk surface.
  2. Turn the steam on while keeping the wand about 1cm under the milk.
  3. Allow the milk to spin and stretch for around 10–15 seconds.
  4. Lower the wand slightly to heat the milk for another 10–15 seconds.

You’ll hear a gentle hissing sound as air mixes with the milk. This is what creates the creamy foam needed for a perfect cappuccino.

When finished, turn off the steam wand, remove the jug and clean the wand immediately to make it ready for the next time. 

Over time, you’ll learn to listen to the sound and watch the bubbles to achieve the perfect milk texture for your taste.

Bring it all together!

Now let's bring our cappuccino together. So you know, have your espresso in your cup and your milk in a jug. Give your jug a tap or two on the counter, and remove any air pockets.

Here’s how to pour it:

  1. Start with your freshly brewed Wild Highland Coffee espresso in a cup.
  2. Swirl the milk to create a silky texture.
  3. Tilt the cup slightly and pour the milk slowly.
  4. Gradually straighten the cup as it fills.

The more you practice, the better you will become, perhaps even being able to create some frothy decorations in your milk! If you like, finish with a light sprinkle of cocoa powder or chocolate.

You should now have a smooth, balanced cappuccino with a rich espresso flavour and velvety milk.
